Traits associated with Witches are very much as they are in the real world; witches ride broomsticks, mix potions, and associate with monsters. The monsters in question are Hobbes, and children seduced by dark spirits, later turned into ugly, stupid, and violent creatures.
Fable: The Lost Chapters
In Fable: The Lost Chapters, there is a witch that lives in a small hut at Bowerstone Quay who mixes potions. She plays a major role in The Sick Child quest, in which the worried mother of Aldy sends the Hero of Oakvale to the witch. She tells the Hero to collect four Blue Mushrooms, found in different areas among Albion, to brew the cure. When the Hero returns, the witch is revealed to have had the antidote all along, and exchanges it for the mushrooms. The antidote is then taken to Aldy's mother.
Fable II
Witches are referenced a lot in Fable II. Murgo claims to sell broomsticks made by "expert" witches. Witchcraft seems to be an alternative term for Will, as the old ways of Heroes have been forgotten. An example of this is when fighting guards, and using Will, they will yell "Witchcraft!". Witchcraft is seen as negative force, and an organisation called the Witchspotters was present in Albion. The organisation was devoted to stopping witches. They were the group who tried and executed Lady Grey for witchcraft, as is revealed in Love Hurts. Before the events of Fable II, the Witchspotters disbanded. Witchcraft is still seen as negative, and many people have bounties placed on their heads by their neighbours if they are suspected of witchcraft. The bounties are usually collected by assassins.
Another known witch was magic user Vipress, a beautiful warrior-witch who owned a mace called the Calavera.
Fable III
In Fable III, the ideas of witchcraft have mostly faded away, much like in the real world during the Industrial Revolution. However, the Traitor's Keep Downloadable content introduces the character of "Witchcraft Mary", one of Ravenscar's most dangerous inmates. Due to her knowledge of the workings of Will and Albion's monsters, she was said to be a witch. However, this is proven to be false, as she was, in fact, a scientist with an obsession over very macabre interests.
